A warm tasty hit, every time! This chili con venison is especially perfect for those cold hunting days. This recipe is use to from venison, fallow deer, crowned deer, whitetail, muntjac and wild boar. Yes, chili con venison is one of my favorite eats.

Ingredients:

500 g. minced venison

2 tsp. ground cinnamon

2 tsp. ground cumin

2 tsp. ground coriander

1-2 tsp. dried chili

2 cloves garlic, pressed

3 onions, finely chopped

1 can chopped tomato

1 can tomato paste

0,5 L wild bullion or beef

2 cans kidney beans/black beans

Olive oil for frying

50 g. dark chocolate

Salt and freshly ground pepper

Topping:

Freshly grated cheddar

Fresh coriander

Nachos, bread or rice - or all at once

sour cream

Fresh chilli, sliced

Procedure:

Chop the onion and garlic. Fry on a low heat for 2-3 minutes until soft but not coloured. Add all the spices. Fry for a few more minutes. Add the minced meat and fry until browned.

Add the bullion, tomato paste and chopped tomato. Simmer for 30 minutes. Stir occasionally and season to taste.

Add the beans during the last 10 minutes of cooking time.

Take the pan off the heat. Add the chopped dark chocolate and stir until it is well mixed with your chili con venison.

Serve in a deep bowl with favorite toppings.
