Duck spring rolls

Homemade wild spring rolls is a winner dinner. It takes less than 30 min. to cook, which makes it perfect for wild weekdays. These spring rolls are crispy on the outside and with a tasty duck and vegetable filling.

Serve 6 spring rolls

Ingredients:
6
spring roll wrappers (filo dough)
1 duck breast
1 red onion
1 garlic
1 red snack pepper
1 carrot
1 handful broccoli
2 dl. vegetable oil
Salt and freshly ground pepper

Directions:
Season duck breast and fry in oil for 3-4 min. on each side and let it rest for 10 min. while preparing the veggies.

Finely chop red onion, mince garlic and fry on a pan on medium heat. Cook for 2 min. and add finely sliced red snack pepper, roughly grated carrots and finely chopped broccoli. Cook for 2 more min.

Place 2 tablespoons filling on a spring roll wrap. Roll and close the edge with water if needed. I prefer to fry the spring rolls on a pan in some vegetable oil, but you can also deep fry. Be aware of closing the spring rolls to perfection if you deep fry, because otherwise you risk getting them filled with oil.

There's no rules about filling, use exactly what you like. Serve with your favourite sauce - good ideas could be sweet chili sauce, soya, plum sauce.
