Sweet and spicy marinade for wild meat

You may have already tried my Signature Marinade, which makes your wild meat even more delicious and tender. This marinade is full of flavour that you can brush onto your favourite game meat. The meat in this recipe is reindeer fillet from Greenland.

Ingredients

  • 100 ml olive oil

  • 100 ml ketchup

  • 50 ml soy sauce

  • 50 g brown sugar

  • 2 pieces garlic, chopped

  • 1 red onion, sliced

  • Habanero sauce (tabasco or dried chilli)

  • Paprika

  • Salt and pepper

Procedure

Marinate your venison in my Signature Marinade for at least an hour, but preferably for 6-8 hours in the fridge.30 minutes before cooking time, remove the meat from the marinade and let it rest on the tables. Then mix all the ingredients for the marinade together. Brush the meat all over with the marinade and repeat a few times while the meat is roasting over a fire.
